When Life Slows Down

Well bloggers as you know it's been a wild ride for a while and now it is finally slowing down for the kids and I. Not to say we aren't still a little busy, but now it's more of a busy playing catch up on the house, blog, art, and most importantly for all of us, much needed rest. We have been doing the best we can to get back into a normal routine after all the crazy and chaos of the last few months. We've survived having lots of guests over (which we love), 2 birthday parties for the kids, a bridal shower, a wedding, and Josh being gone through most of it. That on top of our regular chaos. But now we can breath. Yes Thanksgiving is rapidly approaching and Christmas right on it's heels, but I think it'll be fine. If the weather is bad, I'm not going to travel. Two kids, single mom, not overly trust worthy tires on the car, and blizzard just sounds like a recipe for disaster. So, the question becomes do I go, or do I not. It's not entirely that I don't want to go. I'd like to visit family and all that, but I also want to be safe. I don't really know what the answer is just yet. But I'll have to figure it out soon as Thanksgiving is in less than 2 weeks. It doesn't help not knowing what Josh's work schedule is like, but such is life. If nothing else at least I've got a turkey for me and the kids to enjoy! Funny thing about it is I don't even like turkey much other than dark meat. But I love to cook it. And all the sides. Oh the sides are the best part. Hmmm, maybe I'll have a giant feast just for fun. I wonder if I could freeze the left-overs. Or if nothing else make a crap ton of soup.
For today I'm going to make oven roasted chicken with potatoes and roasted Brussel sprouts drizzled in balsamic. Should be good. But first, dishes. Otherwise I won't have a sink to clean out the chicken in. Like I said, still playing catch up on the house. 😁 For the chicken I'm thinking a little basil, oregano, garlic, onion powder, salt and pepper to season it. Then drizzle it in melted butter. Sear the outside and then slow roast it for a few hours. That sounds good, don't you think?
Well I best get to it then. Got a chicken to cook, a mountain of laundry to fold, and a sink full of dishes to get done. Should probably make my bed at some point too. Lol. See ya soon!!!! Oh and HAPPY THANKSGIVING!!!!
