From My Kitchen to Your's
As I have been writing on the same post for several days now and am still trying to finish it up so you all can catch up on the insanity of our house, I decided today I'd just post a few of my favorite BBQ recipes I've come across over the years.
Steak-
Marinade:
Soy sauce
Worcestershire sauce
Yellow or Dijon mustard
Olive oil
Garlic
Pepper
Balsamic or white vinegar (I prefer balsamic)
Your favorite cut of steak.
In a gallon sized ziplock bag add ingredients to your taste. Then add steak and leave in the fridge for a couple hours or overnight. Toss it on the grill and cook through to your liking. I prefer blue rare, but that's uncommon.
Garden Caesar-
Romaine lettuce-chopped
Croutons
Light Caesar dressing
Cherry tomatoes
Chevre goat cheese-crumbled
Toss in a bowl and serve.
Heart Attack Taters-
Baby red potatoes or Yukon Gold Potatoes
Salt
Pepper
Garlic
Chili powder
Heavy cream
Sour cream
Butter
Mozzarella cheese
Cheddar cheese
Parmesan cheese
Romano cheese
Asiago Cheese
Boil potatoes and mash. Add other ingredients to your taste. Blend well. No gravy needed on these bad boys.
Karen's Potato Salad- (yes, I stole this from my sister in-law. To be fair it's the best potato salad I've ever had the pleasure of stuffing my face with. When I make it here at home it's gone before you can say jackrabbit.)
6 baker potatoes
6 hard boiled eggs cooled and chopped
1/2 cup sour cream
2 teaspoons mustard (I use yellow mustard)
1 Tablespoon white vinegar
1 teaspoon salt
1/2 teaspoon celery seed
1/2 teaspoon pepper
1/2 teaspoon onion powder
Peel potatoes and chop down to bite sized. Boil until slightly firm but done and drain. Put them in a big bowl and cool. Once cooled, dump in the hard boiled egg whites. Blend the hard boiled egg yolks, sour cream, mustard, vinegar, salt, celery seed, pepper, and onion powder in a smaller bowl. Then add and gently stir into potato mix. Shove in the fridge for a bit or stuff your face. Either is good.
Chili-
Black beans
White beans
Kidney beans
Chili beans
Baked beans
Tomato paste
Chili powder
Onion powder
Garlic
Bell peppers
Sweet chili sauce
Chipotle tabasco sauce
Stuff it all in a pot or a crock pot and let her go. This is literally one of the easiest of all these recipes. It's a open and dump kind of thing. There is no real science to this one.
Now what's a BBQ without some dessert and delicious drinks? That's no BBQ at all! So let's whip up the last lovely little bit shall we?
Mini Cheesecakes-
Crusts-
4 whole graham crackers, crushed finely
4 Tablespoons butter, melted
Filling-
12 ounces cream cheese
1/4 cup sour cream
1/3 cup sugar
1 teaspoon vanilla extract
1 egg, room temperature
a smidge of almond extract
For the crust blend the graham crackers and butter and put a bit of it in each greased cupcake and bake for about 3 minutes at 325°. While the crusts are in the oven, blend the filling together making sure to add the egg last after blending the other ingredients well. once the crusts are done and the filling blended, top the crusts with a bit of filling and bake for 15-17 minutes. Allow to cool for a good 1/2 hour, then toss in the fridge until completely cook. Enjoy topping with your favorite toppings be it berries, purees, or even just a good ol' sweet cream.
Bloody Beach-
Vodka
Sprite
Cranberry juice
Malibu rum
Add a small amount of vodka to the bottom of a cold glass. Add 1/3 Sprite, 1/3 Cranberry juice and top off with Malibu rum. Drink and enjoy!
Malibu and Coke-
Literally Malibu rum and Coca cola
